1 orange, rind finely grated, juiced

2 punnets strawberries, hulled, sliced

2 tablespoons icing sugar

250g reduced-fat ricotta cheese

2 tablespoons milk

1 teaspoon vanilla essence

2 passionfruit, pulp removed
Method

1Combine orange juice, strawberries and 1 tablespoon of icing sugar in a small ceramic bowl. Toss gently to combine. Cover and refrigerate for 20 minutes.

2Meanwhile, using an electric mixer, beat orange rind, remaining icing sugar, ricotta, milk and vanilla until smooth. Add passionfruit pulp and mix gently to combine.

3Spoon strawberries and juice into bowls or glasses. Serve with passionfruit ricotta.
