Nicoise sandwich

  • 4 eggs, at room temperature
  • 425g can tuna in olive oil, drained, flaked into large chunks
  • 1/3 cup creamy roasted garlic dressing
  • 8 thick slices kalamata olive sourdough bread
  • 1 Lebanese cucumber, sliced diagonally
  • 2 medium tomatoes, sliced

    Place eggs in a medium saucepan. Cover with cold water. Bring to the boil over high heat, stirring occasionally (this helps the yolks stay centred). Reduce heat to medium. Simmer for 5 minutes for a medium boiled egg. Drain. Refresh under cold water. Peel. Thickly slice.

    Gently toss tuna and dressing together in a bowl. Place 4 slices of bread on a flat surface. Top with cucumber, tomato, tuna mixture and egg. Sandwich with remaining bread slices. Cut in half. Serve.
