Nectarines with ginger & almonds

  • 8 medium ripe nectarines, stones removed, cut into wedges
  • 2 tablespoons demerara sugar
  • 1 teaspoon finely grated fresh ginger
  • 1 teaspoon butter or margarine
  • 25g (1/3 cup) flaked almonds

    Place the nectarine wedges, demerara sugar and ginger into a medium bowl and mix well.

    Heat the butter or margarine in a small frying pan over medium-low heat. Add the almonds and cook, stirring often, for 3-4 minutes or until they are light golden. Add the almonds to the nectarine mixture and stir gently to combine. Serve.
