1/2 vanilla bean

500g frozen mixed berries

1/4 cup caster sugar
Method

1Halve vanilla bean lengthways. Scrape seeds from bean. Place berries, seeds, bean and sugar in a saucepan over low heat. Stir to combine.

2Cook, stirring occasionally, for 8 to 10 minutes or until berries have just softened. Remove from heat. Cool completely. Serve.
