Mini mixed berry banana breads

  • 1 1/2 cups self-raising flour
  • 1/2 cup wholemeal self-raising flour
  • 1/4 teaspoon bicarbonate of soda
  • 1/2 cup caster sugar
  • 2 eggs
  • 1/3 cup light-flavoured extra virgin olive oil
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 cup mashed banana (see notes)
  • 1 cup frozen mixed berries (see notes)

    Preheat oven to 190C/170C fan-forced. Grease an 8-hole (3/4-cup-capacity) mini loaf pan. Line bases and long sides of pan holes with baking paper.

    Place flours, bicarb and sugar in a large bowl. Whisk to combine. Make a well. Whisk eggs, oil, buttermilk and vanilla together. Add to flour mixture with banana. Stir until just combined. Fold in 3/4 cup berries. Divide mixture evenly among prepared pan holes. Top with remaining berries.

    Bake for 20 to 25 minutes or until golden and just firm to touch. Stand in pan for 5 minutes. Transfer to a wire rack to cool completely. Store in an airtight container for up to 3 days (see notes).
