Mini meatball & cherry tomato pizzas with pineapple salad

  • 280g pkt plain naan bread
  • 160ml (2/3 cup) mild chunky tomato salsa
  • 375g pkt extra lean italian sausages
  • 250g punnet cherry tomatoes, halved
  • 100g (1 cup) Perfect italiano pizza cheese

Pineapple salad

  • 1/3 sweet pineapple, peeled, cored, coarsely chopped
  • 2 lebanese cucumbers, peeled into ribbons
  • 1/4 cup fresh basil leaves, shredded

    Preheat oven to 200°. To make the pineapple salad, combine the pineapple, cucumber and basil in a serving bowl.

    Divide the naan between 2 baking trays. Spread evenly with the salsa.

    Remove the skin from the sausages. Roll the sausage meat into small balls.

    Arrange the meatballs and tomato on the bread. sprinkle with the cheese. Bake, swapping trays halfway through cooking, for 15 minutes or until the meatballs are cooked through and the naan is crisp and golden. serve with the pineapple salad.
