Mini corned beef rolls

  • 200g green cabbage, shredded
  • 200g red cabbage, shredded
  • 1 small carrot, grated
  • 2 green onions, thinly sliced
  • 2 tablespoons chopped fresh dill
  • 1/2 cup coleslaw dressing
  • 16 small soft dinner rolls
  • 16 slices corned beef silverside
  • 16 gherkins, halved
  • 16 slices swiss cheese, halved

    Place cabbage, carrot, onion, dill and dressing in a bowl. Season with salt and pepper. Toss to combine.

    Split rolls in half, being careful not to cut the whole way through. Place corned beef on base of each roll. Top with coleslaw, gherkins and cheese. Serve.
