Mexican chicken and salsa wraps

  • 1 avocado, chopped
  • 3 teaspoons lime juice
  • 2 herb and garlic wraps
  • 8 small baby cos lettuce leaves
  • 1 cup shredded cooked chicken
  • 125g can corn kernels, drained
  • 1/4 cup roasted red capsicum strips
  • 1/3 cup grated tasty cheese
  • 2 tablespoons mild tomato salsa

    Place avocado and lime juice in a bowl. Season with salt and pepper. Using a fork, mash to combine.

    Place wraps on a flat surface. Spread with avocado mixture. Divide lettuce, chicken, corn, capsicum and cheese between wraps. Drizzle with salsa.

    Roll up wraps tightly to enclose filling. Serve, or pack and refrigerate until required.
