470g pkt Green's Moist Vanilla Cake

2 Coles Australian Free Range Eggs

2/3 cup (160ml) milk

60g butter, softened

2 teaspoons lemon juice

1 orange snake lolly

12 white marshmallows

Dark chocolate writing icing, to decorate

Bright red writing icing, to decorate

6 sour lolly straps

Silver cachous, to decorate
Method

1Preheat oven to 180C. Line a 12-hole, 1/3-cup (80ml) muffin pan with foil cases. Use an electric mixer on low speed to beat the cake mix, eggs, milk and butter in a bowl until combined. Increase speed to medium and beat for 2 mins. Spoon evenly among the cases.

2Bake for 20-25 mins or until a skewer inserted in the centres comes out clean. Set aside in the pan for 5 mins to cool slightly before turning onto a wire rack to cool completely.

3Combine the icing mix from the packet in a bowl with the lemon juice and enough water to reach a smooth, thick consistency.

4Spread over cupcakes, reserving a little icing for attaching lollies.

5Cut small triangles from snake lolly. Use icing to attach to marshmallows to make noses. Use writing icing to draw on faces. Press onto cupcakes. Use scissors to cut sour straps into thin strips. Wrap around marshmallows to make scarves. Place cachous on icing to make buttons. Use writing icing to draw on arms.
