340g jar marinated artichoke hearts

100g snow peas, trimmed, thinly sliced

1/2 x 220g tub baby bocconcini, drained, halved

80g mixed salad leaves

1/2 small red onion, thinly sliced

3/4 cup (180g) roasted red capsicum strips

1 tablespoon chopped fresh oregano leaves
Method

1Drain artichoke hearts, reserving 1/4 cup marinade. Cut artichoke hearts into quarters.

2Place snow peas, bocconcini, salad leaves, onion, capsicum, oregano and artichoke pieces in a bowl. Drizzle with reserved marinade. Toss gently to combine. Serve.
