Ingredients

4 (about 800g) parsnips, peeled, halved, cut into large wedges

1 large firm red pear, cut into wedges

1 large red onion, cut into wedges

6 garlic cloves, unpeeled

1/3 cup fresh sage leaves

2 tablespoons maple syrup

2 tablespoons olive oil

1/4 teaspoon dried chilli flakes
Method

1Preheat oven to 190C. Line 2 baking trays with baking paper. Combine the parsnip, pear, onion, garlic and sage on the prepared trays. Combine the maple syrup, oil and dried chilli flakes in a bowl. Season.

2Pour the maple mixture evenly over parsnip mixture and toss to combine. Roast, turning halfway during cooking, for 50 minutes to 1 hour or until the parsnip is golden and tender.
