Maple bacon crumpet ice-cream sandwich

  • 1 teaspoon oil
  • 150g streaky bacon, torn
  • 1/4 cup maple syrup
  • 4 scoops vanilla ice-cream
  • 8 Golden Crumpets, toasted
  • Sliced banana, to serve

    Heat the oil in a large frying pan over medium-high heat. Cook the bacon for 2 minutes or until golden. Add 1 tablespoon maple syrup and bring to the boil. Cook for 30 seconds, tossing to coat the bacon in syrup.

    Sandwich half the bacon and the ice-cream between 2 crumpets. Top with remaining bacon and drizzle with remaining syrup. Serve with sliced banana.
