Macaroni cheese with ham and parsley

  • 400g macaroni
  • 40g (2 tablespoons) butter
  • 2 tablespoons plain flour
  • 500ml (2 cups) milk
  • 45g (1/2 cup) shredded parmesan
  • 115g (1 1/3 cups) coarsely grated cheddar
  • 150g sliced leg ham, cut into short thin strips
  • 1/4 cup chopped fresh continental parsley
  • 2 tablespoons dry (packaged) breadcrumbs

    Kids’ task (with adult assistance): Cook the macaroni in a large saucepan of salted boiling water, following packet directions, until al dente. Drain and return to the pan. Set aside.

    Meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, for 30 seconds or until foaming.

    Remove from the heat and use a whisk to gradually whisk in the milk. Return to medium heat and whisk continuously for 4-5 minutes or until the mixture comes to the boil and thickens slightly.

    Preheat grill on medium. Remove milk mixture from the heat and stir in parmesan and 80g (1 cup) of the cheddar. Add to pasta with the ham and parsley. Spoon into four 500ml (2-cup) heatproof dishes. Sprinkle with breadcrumbs and remaining cheddar. Cook under preheated grill for 3-5 minutes or until cheddar is melted and golden. Serve immediately.
