Ingredients

300g (2cups) self-raising flour

80g butter, chilled, cubed

2 tablespoons chopped fresh chives (your child can snip these using children's scissors)

80g (1 cup) coarsely grated cheddar

5 tablespoons milk

1 egg, at room temperature

40g leg ham, cut into short, thin strips
Method

1Preheat oven to 200°C. Brush a baking tray with the butter to grease.

2Kid’s task: Sift the flour into a large bowl. Use your fingertips to rub in the butter until the mixture resembles fine crumbs. Stir in the chives and 65g (3/4 cup) of the cheddar. Make a well in the centre.

3Kid’s task: Use a fork to whisk the milk and egg together in a small jug. Gradually add the egg mixture to the flour mixture and use a round-bladed knife to mix until the dough just comes together. Turn onto a floured surface and knead for 1-2 minutes or until the dough is smooth.

4Kid’s task: Shape dough into 4 even-sized balls. Place on greased tray.

5Kid’s task (with adult assistance): Use a small blunt knife to mark a shallow cross in the top of each ball of dough. Sprinkle with ham and remaining cheddar. Bake in preheated oven for 20 minutes or until the dampers are golden and sound hollow when tapped on the base. Transfer to a wire rack to cool slightly. Serve warm or at room temperature.
