300g beef mince

1/4 cup grated cheddar

1 egg, lightly beaten

1 tablespoon chopped fresh flat-leaf parsley

1 garlic clove, crushed

1/2 small brown onion, finely chopped

1/4 cup fresh breadcrumbs

2 tablespoons tomato sauce, plus extra to serve

1 tablespoon barbecue sauce
Mini burger buns

1 1/3 cups plain flour, plus extra for dusting

7g sachet dry yeast

1 teaspoon caster sugar

1 teaspoon dried oregano
-
2 tablespoons extra virgin olive oil

2/3 cup warm water

Method

1Preheat oven to 200C/180C fan-forced. Grease and line 2 large baking trays with baking paper.

2Combine mince, cheddar, egg, parsley, garlic, onion and breadcrumbs in a bowl. Season with salt and pepper. Roll level tablespoons of mixture into balls. Place on 1 prepared tray.

3Combine tomato sauce and barbecue sauce in a bowl. Brush meatballs with a little sauce mixture. Bake for 20 to 25 minutes, brushing with sauce mixture every 5 minutes, until meatballs are browned and cooked through.

4Meanwhile, make Mini Burger Buns. Combine flour, yeast, sugar and oregano in a bowl. Make a well. Add oil and water. Using a butter knife, mix until just combined. Turn dough onto a well-floured surface. Roll out dough until 5mm thick. Using a lightly floured 3.5cm cookie cutter, cut out 48 rounds. Place on remaining prepared tray. Spray with oil. Bake for 12 minutes or until lightly browned.

5Place a meatball on a bun. Top with a little extra tomato sauce. Top with a bun. Secure with a skewer. Repeat with remaining buns, meatballs and tomato sauce. Serve.
