Lime and coconut cheesecake pots

  • 1/2 x 250g packet butternut snap biscuits
  • 2 tablespoons NESTLÉ BAKERS' CHOICE White CHOC BITS
  • 1/3 cup moist coconut flakes
  • 250g packet cream cheese, chopped
  • 1 cup smooth ricotta
  • 1/2 cup thickened cream
  • 1/2 cup icing sugar mixture
  • 3 teaspoons finely grated lime rind
  • 1 tablespoon lime juice
  • Whipped cream, to serve

    Process biscuits, choc bits and half the coconut together until mixture is finely chopped. Transfer to a bowl.

    Process cream cheese, ricotta, cream, icing sugar, lime rind and juice together until smooth and combined.

    Spoon 1/2 cream cheese mixture between 4 x 1 1/2 cup-capacity serving glasses. Sprinkle with 1/2 the biscuit mixture. Repeat layers. Dollop with whipped cream and sprinkle with remaining coconut. Serve.
