Lamb and spinach pesto rolls

Ingredients

  • olive oil cooking spray
  • 1 large brown onion, halved, thinly sliced
  • 4 thick lamb sausages
  • 4 long bread rolls
  • 20g baby spinach
  • 2 medium tomatoes, thinly sliced

Spinach pesto

  • 50g baby spinach
  • 1/2 cup dry-roasted almonds
  • 1/4 cup finely grated parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

Method

    Spray a barbecue plate with oil. Heat over medium-high heat. Add onion. Cook, stirring occasionally, for 5 minutes or until softened. Transfer to a plate. Cover to keep warm. Cook sausages, turning, for 7 to 10 minutes or until cooked through.

    Meanwhile, make Spinach pesto: Process spinach, almonds, parmesan, oil, lemon juice and 2 tablespoons cold water until finely chopped and almost smooth.

    Cut rolls in half lengthways, being careful not to cut all the way through. Place spinach, tomato, onion and 1 sausage in each roll. Top with pesto. Serve.
