Kid-friendly lamb meatballs with beetroot hummus

Ingredients

  • 500g lamb mince
  • 1/2 cup packaged dried breadcrumbs
  • 1 egg, lightly beaten
  • 1 garlic clove, crushed
  • 1 tablespoon harissa seasoning
  • 1 tablespoon extra virgin olive oil
  • 4 pita pockets, cut into wedges
  • 220g tub beetroot hummus
  • 1 baby gem lettuce, leaves separated
  • 1 carrot, cut into long strips
  • 100g perino duet tomatoes, halved
  • 1 lebanese cucumber, cut into ribbons

Method

    Combine mince, breadcrumbs, egg, garlic and seasoning in a bowl. Season with salt and pepper. Roll mixture into 3cm balls.

    Heat oil in a large frying pan over medium heat. Cook meatballs for 5 minutes, turning, until browned all over and cooked through.

    Serve meatballs with pita, dip, lettuce, carrot, tomato and cucumber
