Japanese-style tuna and rice

  • 125g tub microwave brown rice
  • 75g snow peas, trimmed, thinly sliced
  • 1/2 small avocado, chopped
  • 95g can lemon pepper tuna, drained
  • 1 green onion, thinly sliced
  • 2 tablespoons Kewpie mayonnaise
  • 1/2 teaspoon wasabi paste

    Microwave rice following packet directions.

    Meanwhile, place snow peas in a bowl and cover with boiling water. Stand for 1 minute. Drain. Refresh under cold water. Drain.

    Place avocado, tuna, onion, snow peas and rice in a bowl. Season with salt and pepper. Toss gently to combine.

    Combine mayonnaise, wasabi and 1 tablespoon water in a small bowl or glass. Drizzle with dressing. Serve.
