560g pkt Coles Australian Beef & Pork Meatballs

4 Coles Brand White Soft Wraps

310g jar grilled eggplant, drained

250g vine-ripened cherry tomatoes, halved

60g pkt Coles Brand Australian Baby Rocket

150g Coles Brand Basil Pesto
Method

1Preheat oven 200C. Spray a baking tray with oil. Place the meatballs on the prepared tray and spray with oil. Bake for 30 mins or until golden and cooked through.

2Meanwhile, prepare the wraps following packet directions.

3Place the wraps on serving plates. Top with the eggplant, tomato, rocket and meatballs. Drizzle with pesto.
