Ingredients

1 small carrot, cut into matchsticks

8 snow peas, cut into matchsticks

2 green onions, thinly sliced diagonally

2 button mushrooms, thinly sliced

1 tablespoon tom yum paste

2 teaspoons lime juice

2 teaspoons fish sauce
Method

1At home: Combine carrot, snow peas, onion and mushroom in a bowl. Divide between 2 snap-lock bags or airtight containers. Refrigerate. Combine tom yum paste, lime juice and fish sauce in a bowl. Divide between 2 small screwtop jars or airtight containers. Refrigerate.

2At work: Place 1 portion of vegetables and 1 portion of tom yum paste mixture in a heatproof bowl. Cover with 1 cup of boiling water. Stir until paste dissolves. Stand for 1 to 2 minutes or until vegetables are tender.
