350g fresh ricotta

1 1/2 tablespoons honey

250g (1 punnet) strawberries, hulled

8 fresh dates

1/2 rockmelon, peeled, cut into small wedges

Extra honey, to serve
Method

1Place the ricotta and honey in the bowl of a food processor. Blend until smooth.

2Spoon the honey ricotta into a serving bowl and place in the centre of a large serving platter.

3Place the strawberries, dates and rockmelon on the serving platter around the ricotta. Drizzle the ricotta with extra honey and serve immediately.
