Honey ricotta with fresh fruit

Ingredients

  • 350g fresh ricotta
  • 1 1/2 tablespoons honey
  • 250g (1 punnet) strawberries, hulled
  • 8 fresh dates
  • 1/2 rockmelon, peeled, cut into small wedges
  • Extra honey, to serve

Method

    Place the ricotta and honey in the bowl of a food processor. Blend until smooth.
  • 2
    Spoon the honey ricotta into a serving bowl and place in the centre of a large serving platter.
  • 3
    Place the strawberries, dates and rockmelon on the serving platter around the ricotta. Drizzle the ricotta with extra honey and serve immediately.
