Honey mustard drumsticks

  • 1/4 cup honey
  • 2 garlic cloves, crushed
  • 2 teaspoons dried mixed herbs
  • 1 1/2 tablespoons wholegrain mustard
  • 8 chicken drumsticks
  • 500g desiree potatoes, roughly chopped
  • 500g orange sweet potato, peeled, roughly chopped
  • 1 tablespoon olive oil
  • 1 bunch asparagus, trimmed

    Preheat oven to 200°C/180°C fan-forced. Combine honey, garlic, herbs and mustard in a bowl. Place chicken, in a single layer, in a ceramic baking dish. Add honey mixture. Turn to coat.

    Line a baking tray with baking paper. Place potato and sweet potato on prepared tray. Drizzle with oil. Season with salt and pepper. Toss to coat. Bake chicken and potato for 45 minutes, turning both halfway through cooking.

    Add asparagus to tray with potato. Cook for 10 minutes or until chicken is golden and cooked through and vegetables are tender. Serve.
