Honey muesli with tropical fruits

Ingredients

  • 3 cups rolled oats
  • 1/2 cup cashews, roughly chopped
  • 1/4 cup honey, warmed
  • 1/2 teaspoon ground cinnamon
  • 1 cup chopped dried tropical fruits
  • 500g low-fat natural yoghurt
  • 3 cups fresh fruit (such as pineapple, passionfruit, red papaya, banana)

Method

    Preheat oven to 180°C. Line a baking dish with baking paper. Combine oats and cashews. Spread over dish. Cook, stirring every 5 minutes, for 25 minutes or until golden. Spoon into a large bowl. Add honey to warm oat mixture. Stir to combine. Set aside to cool.

    Stir in cinnamon and dried tropical fruits. Spoon into bowls. Top with yoghurt and fresh fruit. Serve.
