Healthy egg "mayo" sandwich

  • 1 large egg (66 grams)
  • 1 tablespoon low-fat cottage cheese
  • White pepper, to taste
  • Salt, to taste
  • Rye or Sourdough bread, toasted or untoasted

    Put a cold egg in water from the tap, bring to the boil and time about 8 minutes from the time the water starts boiling for a hard boiled egg.

    When the egg is cooked, remove the shell. If you prefer a warm sandwich mash the egg with a fork till its broken into rough chunks and then add the cottage cheese and mash till a desired consistency is reached. Season to taste.

    If you like your sandwich filling cold, then cool the egg completely before mashing and adding the cottage cheese.

    Spread on bread and enjoy or refrigerate for up to 2 days in an airtight container in the fridge.
