3 oranges

1/3 cup fig jam

1 tablespoon wholegrain mustard

2 teaspoons olive oil

8 ham steaks
Method

1Juice 2 oranges. Peel and segment remaining orange (see note). Combine jam, mustard and 1/2 cup orange juice in a jug.

2Heat oil in a large frying pan over medium heat. Add half the steaks. Cook for 2 minutes each side, basting with 1 tablespoon jam mixture, or until lightly browned. Transfer to a platter. Cover to keep warm. Repeat with 1 tablespoon jam mixture and remaining steaks. Transfer to platter.

3Add remaining jam mixture and 2 tablespoons cold water to pan. Stir to combine. Add orange segments. Bring to the boil. Reduce heat to low. Simmer for 3 minutes or until slightly thickened.

4Serve steaks topped with orange segment mixture.
