Ham, cheese & broccoli bake

  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 150g leg ham, chopped
  • 2 tablespoons tomato paste
  • 2 x 400g cans diced tomatoes
  • 375g broccoli, trimmed, cut into small florets
  • 1/4 cup fresh basil leaves, finely chopped
  • 375g dried macaroni pasta
  • 40g (1/2 cup) reduced-fat cheddar, grated
  • 80g (2/3 cup) reduced-fat mozzarella, coarsely grated
  • 70g feta, crumbled

    Heat the oil in a saucepan over medium heat. Add the onion, garlic and ham. Cook, stirring, for 5 minutes or until onion softens.

    Add the paste. Cook, stirring, for 1 minute. Add the tomato. Bring to boil. Reduce heat to low. Simmer for 10-15 minutes or until thickened slightly. Add the broccoli for the last 5 minutes of cooking time. Add the basil. Stir.

    Meanwhile, cook the pasta following packet directions until al dente. Drain. Return to pan.

    Add broccoli mixture and cheddar to the pasta. Toss to combine.

    Preheat grill on high. Transfer pasta mixture to a 2L (8 cup) ovenproof dish. Sprinkle with mozzarella and feta. Grill for 5 minutes or until cheese melts.
