  • 30g butter
  • 1 tablespoon caster sugar
  • 1 cup (120g) coarsely grated reduced-fat cheddar
  • 6 eggs, beaten
  • 3/4 cup (180ml) low-fat milk
  • 2 cups (300g) self raising flour
  • 175g shaved ham, cut into thin strips
  • 1/4 cup (70g) tomato paste

  • 1
    Preheat oven to 200°C/180°C fan-forced. Oil a 19cm x 29cm slice pan.

Cook egg in an oiled medium frying pan over low heat, stirring constantly, until scrambled.
  • 3
Sift flour and sugar into a medium bowl, then rub in butter until the mixture resembles breadcrumbs. Stir in milk and mix to a soft, sticky dough. Lightly knead dough on a floured surface, then roll out to 30cm x 40cm.

Spread tomato paste over dough, then sprinkle with ham, top with egg and sprinkle with cheese.

Starting from a long side, roll up dough firmly into a sausage shape and trim ends. Cut across into 12 slices. Place in a single layer in prepared pan. Bake 30 minutes or until risen and pale golden. Serve pinwheels warm.
