Green eggs and ham crumpets

Ingredients

  • 8 eggs
  • 1/2 cup fresh flat-leaf parsley, very finely chopped
  • 4 Golden Crumpets, toasted
  • 1/2 avocado, smashed
  • 4 slices Don Thinly Sliced Leg Ham
  • 2 teaspoons olive oil
  • 1 tablespoon light thickened cream
  • Chopped chives, to serve

Method

    Whisk the eggs in a large bowl until combined. Whisk in the parsley.

    Spread the crumpets with the avocado and top with the ham.

    Heat the oil in a large frying pan over medium heat. Add the egg to the pan and stand for 30 seconds without stirring. Gently push spatula from the edge of the pan to the centre to create large curds of egg. Repeat motion until 3/4 of the egg is set. Add the cream and cook for another 30 seconds. Remove pan from heat before eggs are totally cooked and divide between 4 plates (residual heat will continue to cook eggs while standing).

    Sprinkle eggs with chives and serve with avocado and ham crumpets.
