Gluten-free quinoa chocolate biscuits

Ingredients

  • 1/2 cup NESTLÉ BAKERS' CHOICE Cocoa
  • 1 1/2 cups gluten-free plain flour
  • 2 teaspoons gluten-free baking powder
  • 1 cup quinoa flakes (see Notes)
  • 1/2 cup gluten-free milk chocolate chips
  • 1 cup caster sugar
  • 200g butter, melted, cooled slightly
  • 1 egg white, lightly beaten

Method

    Preheat oven to 180C/160C fan-forced. Line 2 large baking trays with baking paper.

    Sift cocoa, flour and baking powder into a large bowl. Add quinoa, chocolate chips and sugar. Stir to combine. Add butter and egg white. Stir with a wooden spoon until combined.

    Roll level tablespoons of the mixture into balls. Place, 4cm apart, on prepared trays.

    Bake for 12 to 15 minutes, swapping trays halfway through, or until just firm to touch. Stand on trays for 5 minutes. Transfer to a wire rack to cool. Serve.
