Fruit skewers with caramel yoghurt

Ingredients

  • 375g strawberries, hulled, halved
  • 3 kiwifruit, peeled, cut into 3cm pieces
  • 1/2 rockmelon, peeled, deseeded, cut into 3cm pieces
  • 1 cup Tamar Valley Greek Style Yoghurt
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons brown sugar

Equipment

  • You will need 12 bamboo skewers

Method

  • 1
    Thread strawberries, kiwifruit and rockmelon onto skewers. Place on a serving plate. Cover and refrigerate until ready to serve.

    Place yoghurt, vanilla and sugar in a small bowl. Swirl together. Refrigerate for 30 minutes or longer, if time permits, to allow flavours to develop.

    Serve fruit skewers with caramel yoghurt.
