Fruit platter with passionfruit yoghurt

  • 500g Tamar Valley Greek Style Yoghurt
  • 2 passionfruit, halved
  • 2 tablespoons pure icing sugar, sifted
  • 4 just-ripe white peaches or nectarines, stoned, cut into wedges
  • 500g strawberries, washed
  • 250g cherries, washed
  • 250g fresh lychees, peeled
  • 1/2 small seedless watermelon, peeled, thinly sliced
  • 1/2 ripe pineapple, peeled, thinly sliced

    Combine the yoghurt, passionfruit pulp and icing sugar in a medium bowl and whisk until well combined. Cover with plastic wrap and refrigerate to chill.

    Arrange the peaches, strawberries, cherries, lychees, watermelon and pineapple on a serving platter. Serve with the passionfruit yoghurt.
