Freenut butter cookies

  • 1 cup (260g) Eskal smooth FreeNut butter
  • 1 cup caster sugar
  • 1 egg, lightly beaten
  • 2 tablespoons gluten-free plain flour

    Preheat oven to 200°C/180°C fan-forced. Line 2 large baking trays with baking paper.

    Place butter, sugar, egg and flour in a bowl. Stir until combined. Roll 2 level teaspoons of mixture into balls. Place balls on prepared trays. Flatten with a fork. Bake for 12 minutes or until golden brown. Stand on trays for 5 minutes. Cool on a wire rack. Store in an airtight container.
