Flower biscuits

  • 175g butter, chilled, chopped
  • 2 cups plain flour
  • 1/2 cup rice flour
  • 2/3 cup caster sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 4 x 200g packets fruit drop boiled lollies
  • Smarties, to decorate


  • You'll need bamboo skewers or thin sticks of dowel for this recipe.

    Using a food processor, process butter, flours and sugar until mixture resembles breadcrumbs. Add vanilla and egg. Process until mixture forms a soft dough, adding 1 tablespoon cold water if necessary.

    Shape dough into 2 discs. Wrap in plastic wrap. Refrigerate for 1 hour or until firm.

    Preheat oven to 170C/150C fan-forced. Grease and line 3 large baking trays with baking paper. Roll 1 dough disc between 2 sheets baking paper until 3mm thick. Using a 5cm fluted flower-shaped cutter, cut shapes from dough. Place on prepared trays, 3cm apart. Re-roll dough scraps. Using a 3.5cm flower-shaped cutter (see note), cut shapes from centre of each biscuit.

    Remove wrapping from fruit drops. Place 1 fruit drop in the centre of each flower. Carefully insert a skewer or dowel stick into the base of each flower. Bake, 1 tray at a time, for 8 to 10 minutes or until fruit drops have melted and biscuits are just firm and turning golden. Cool biscuits on trays. Serve in a vase of Smarties.
