Easy passionfruit ice-cream

  • 1/4 cup thickened cream
  • 3/4 cup thick vanilla custard
  • 6 passionfruit

    Place cream in a bowl. Whisk until soft peaks form. Stir through custard. Transfer to a 5cm-deep, 10cm x 20cm plastic container. Cover surface with plastic wrap. Freeze for 4 to 5 hours or until almost firm.

    Cut each passionfruit in half. Spoon pulp into a bowl. Place passionfruit shells, cut side up, in a 12-hole, 1 1/2 tablespoon-capacity round-based patty pan.

    Remove cream mixture from freezer. Process until smooth. Transfer to a bowl. Stir in 1/4 cup passionfruit pulp (see note). Spoon 1 heaped tablespoon passionfruit mixture into 1 passionfruit shell. Repeat with remaining passionfruit mixture and passionfruit shells.

    Cover surface with plastic wrap followed by foil. Freeze overnight or until firm.

    Remove shells from freezer. Stand for 5 minutes to soften. Serve.
