1 cup caster sugar
1 vanilla bean, halved lengthways
750g dried fruit salad
1Combine caster sugar, vanilla bean and 1 1/4cups cold water in a saucepan over low heat. Cook, stirring, for 5 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to medium. Simmer for 5 to 7 minutes or until slightly thickened. Add dried fruit. Remove from heat. Set aside for 30 minutes, stirring occasionally. Refrigerate in an airtight container for up to 2 weeks.
