3/4 cup finely chopped dried dates

2 tablespoons golden syrup

2 cups milk

4 eggs

2 tablespoons caster sugar

1/2 teaspoon ground cinnamon

pure cream, to serve
Method

1Preheat oven to 160°C/140°C. Grease a 4 cup-capacity ovenproof dish.

2Combine dates and half the golden syrup in a bowl. Sprinkle date mixture over base of prepared dish. Bring milk to the boil in a saucepan over medium-high heat. Meanwhile, whisk eggs, sugar and remaining syrup in a heatproof bowl until thick and creamy. Gradually whisk in hot milk.

3Pour milk mixture over dates. Sift cinnamon over mixture. Place dish in a large baking dish. Pour boiling water into baking dish until halfway up the sides of smaller dish. Bake for 45 minutes or until just set. Remove dish from oven and water bath. Set aside to cool for 5 to 10 minutes. Serve with cream.
