Ingredients

250ml (1 cup) water

100g (1/2 cup) caster sugar

2 cinnamon sticks, coarsely broken (see note)

250g dark chocolate, finely chopped

20g butter, chopped
Method

1Place the water, sugar and cinnamon stick in a small saucepan over low heat. Stir until the sugar dissolves.

2Increase heat to medium and bring to the boil. Add the chocolate and use a balloon whisk to whisk until the mixture returns to the boil.

3Remove from heat. Whisk in the butter. Set aside, stirring occasionally, to cool completely. Strain the mixture through a fine sieve. Discard the cinnamon stick. Pour into an airtight glass bottle or jar.
