Dark chocolate and cinnamon sauce

  • Makes 500ml (2 cups)


  • 250ml (1 cup) water
  • 100g (1/2 cup) caster sugar
  • 2 cinnamon sticks, coarsely broken (see note)
  • 250g dark chocolate, finely chopped
  • 20g butter, chopped

    Place the water, sugar and cinnamon stick in a small saucepan over low heat. Stir until the sugar dissolves.

    Increase heat to medium and bring to the boil. Add the chocolate and use a balloon whisk to whisk until the mixture returns to the boil.

    Remove from heat. Whisk in the butter. Set aside, stirring occasionally, to cool completely. Strain the mixture through a fine sieve. Discard the cinnamon stick. Pour into an airtight glass bottle or jar.
