Cucumber and sesame mini-maki

  • 1/2 quantity Basic sushi rice (see related recipe)
  • 3 nori sheets, halved
  • 1 1/2 tablespoons sesame seeds, toasted
  • 2 Lebanese cucumbers, cut into matchsticks
  • 2 tablespoons pickled ginger


  • You'll need a bamboo sushi mat for rolling.

    Make Basic sushi rice (see related recipe). Place 1 nori sheet, shiny-side down, on sushi mat. Using damp fingers, spread 1/4 cup rice over nori, leaving a 2cm strip at one long end. Sprinkle with 1 teaspoon sesame seeds. Arrange 1 row cucumber strips across centre of rice. Top with pickled ginger. Using sushi mat, roll up firmly to form a roll. Cut roll into 6 slices. Repeat with remaining ingredients to make 36 pieces.
