Crumpets with cinnamon ricotta, banana, blueberries and honey

Ingredients

  • 150g fresh ricotta
  • 1 tbs icing sugar
  • 1/2 tsp ground cinnamon
  • 4 plain or wholemeal crumpets, toasted
  • 1 ripe banana, thinly sliced
  • 125g fresh blueberries
  • 2 tbs honey

Method

    Combine the ricotta, icing sugar and cinnamon in a small bowl.

    Place crumpets on serving plates. Spoon ricotta on each crumpet. Top with banana and sprinkle with blueberries. Drizzle with honey to serve.
