Crepes with lemon and sugar

Ingredients

  • 1 cup milk
  • 2 teaspoons vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup plain flour
  • 1 teaspoon butter
  • 2 tablespoons sugar
  • 2 medium lemons, halved

Method

    Whisk milk, oil and egg together in a jug. Place flour in a bowl. Make a well in centre. Add milk mixture. Whisk until smooth. Cover. Stand for 30 minutes.

    Melt butter in a 20cm (base), non-stick frying pan over medium heat. Pour 1/4 cup mixture into pan. Swirl to cover base. Cook for 1 minute or until light golden. Turn. Cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture to make 8 crepes.

    Sprinkle crepes with sugar. Squeeze over lemon. Serve.
