Creamy pea puree

Ingredients

  • 2 cups frozen peas
  • 20g butter
  • 1 small brown onion, chopped
  • 2 garlic cloves, crushed
  • 1/4 cup pure cream

Method

    Cook peas in a saucepan of boiling water for 2 to 3 minutes or until tender. Drain.

    Melt butter in same pan over medium-high heat. Add onion and garlic. Cook, stirring, for 3 minutes or until softened. Return peas to pan. Add cream. Cook, stirring, for 1 minute or until heated through.

    Process until almost smooth. Season with salt and pepper. Serve.
