Ingredients

800g sebago potatoes, peeled, cut into 3cm pieces

3 garlic cloves, chopped

3/4 cup milk

1/2 cup pure cream

20g butter, chopped

Extra virgin olive oil, to drizzle

Fresh thyme leaves, to serve
Method

1Place potato, garlic, milk and cream in a large saucepan (see note) over medium heat. Bring to a simmer (do not boil). Reduce heat to low. Cover. Simmer gently for 15 minutes. Remove lid. Simmer for a further 5 to 7 minutes or until potatoes are tender. Remove from heat.

2Using a ladle, remove and discard 1/3 cup of the milk mixture. Add butter to the potato mixture. Mash until smooth. Season well with salt and pepper.

3Serve mash drizzled with oil and sprinkled with thyme leaves.
