Coriander and mint yoghurt

Ingredients

  • 1 Lebanese cucumber, ends trimmed, coarsely grated
  • 260g (1 cup) natural yoghurt
  • 1/4 cup finely shredded fresh mint
  • 1/4 cup coarsely chopped fresh coriander

Method

    Use your hands to squeeze excess moisture from the cucumber. Place the cucumber, yoghurt, mint and coriander in a medium bowl and stir to combine.
