Comforting colcannon

  • 1kg Golden Delight potatoes, peeled, coarsely chopped
  • 80ml (1/3 cup) milk
  • 60ml (1/4 cup) pouring cream
  • 20g butter
  • 20g butter
  • 3 cups savoy cabbage, finely shredded
  • 2 tablespoons chopped fresh chives
  • Salt and white pepper, to season

    Boil the potatoes: Cook potatoes in a large saucepan of salted boiling water for 20 minutes or until tender. Drain. Return to pan. Add milk, cream and butter. Mash until smooth.

    Cook the cabbage: Meanwhile, melt butter in a saucepan. Add cabbage. Cook, stirring occasionally, for 5 minutes or until tender. Add to potato mixture. Stir in chives. Season with salt and white pepper.

    Serve the colcannon: Colcannon tastes great with pies, grilled lamb or pork chops, or slow-cooked casseroles.
