185mls (3/4 cup) boiling water

1 peppermint tea bag

1 lemon, rind finely grated, juiced

2 1/2 teaspoons honey

1 1/2 teaspoons finely grated fresh ginger

1 small garlic clove, finely chopped (optional)

Pinch cayenne pepper
Method

1Place the water into a mug and add the peppermint tea bag. Stand for 1 minute then remove. Whisk in the lemon rind and juice, honey, ginger, garlic (if using) and cayenne pepper with a fork. Sip while hot.
