Coconut, cranberry and apple granola

Ingredients

  • 3 cups traditional rolled oats
  • 1 cup quinoa flakes
  • 2/3 cup seed mix (see Notes)
  • 1/2 cup whole sliced almonds
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 2/3 cup shredded coconut
  • 1 teaspoon ground cinnamon
  • 1/2 cup dried cranberries
  • 1/3 cup dried apple, chopped
  • Passionfruit yoghurt, to serve

Method

    Preheat oven to 180C/160C fan-forced.

    Place oats, quinoa, seed mix, almonds, coconut oil, maple syrup, shredded coconut and cinnamon in a large bowl. Mix well to coat. Transfer to a roasting pan.

    Bake for 45 minutes, stirring every 10 minutes, or until golden brown. Stir in cranberries and apple. Set aside to cool completely. Serve with passionfruit yoghurt.
