Classic chocolate mousse

  • 200g dark chocolate, chopped
  • 2 eggs, separated
  • 2/3 cup thickened cream, whipped
  • Whipped cream, to serve
  • Grated dark chocolate, to serve

    Place chocolate in a microwave-safe bowl. Microwave on high (100%) for 1 to 2 minutes, stirring with a metal spoon halfway through cooking, or until smooth. Cool slightly.

    Stir in egg yolks until just combined. Stir in cream. Using an electric mixer, beat eggwhites in a separate bowl until stiff peaks form. Fold eggwhite, in 2 batches, into chocolate mixture.

    Spoon mixture into four glasses. Cover. Refrigerate for 3 hours or until set. Serve topped with whipped cream and grated chocolate.
