Chunky chocolate, peanut butter and caramel slice

  • 250g salt-reduced butter, chopped
  • 2 (x 180g) blocks dark chocolate, chopped
  • 1 cup caster sugar
  • 1/3 cup brown sugar
  • 3 eggs, lightly beaten
  • 2 cups plain flour
  • 1 cup pecans, roughly chopped
  • 1/2 (x 220g) block milk chocolate, broken into pieces
  • 2 tablespoons crunchy peanut butter
  • 1/2 (x 180g) block dark chocolate, roughly chopped, extra
  • 1/4 cup caramel spread

    Preheat oven to 180C/160C fan-forced. Grease an 18cm x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.

    Place butter and dark chocolate in a saucepan over medium heat. Cook, stirring, for 5 minutes or until smooth and combined. Set aside for 10 minutes to cool.

    Stir in sugars, egg and flour until combined. Stir in pecans. Spoon mixture into prepared pan. Level top with a spatula. Press milk chocolate into mixture in pan. Dollop 1/2 teaspoons of peanut butter onto mixture. Push into chocolate mixture slightly.

    Bake for 40 to 45 minutes or until slice is just firm to touch. Cool completely in pan.

    Place extra dark chocolate in a small microwave-safe bowl. Microwave on HIGH (100%) for 1 minute, stirring with a metal spoon halfway through cooking time, or until melted. Drizzle top of slice with caramel, then dark chocolate. Set aside for 30 minutes to allow chocolate to set. Serve cut into squares.
