Christmas pudding popsicles

  • 1 1/2 cups full cream milk
  • 1 1/2 cups thickened cream
  • 1/2 cup sugar
  • 110g Coles Mini Christmas Pudding, roughly broken apart
  • 1 cinnamon stick, snapped in half
  • 1 vanilla bean, seeds scraped
  • 1/4 teaspoon ground nutmeg
  • 6 free range egg yolks


  • You will need an ice cream machine, a bowl of ice and ice cream moulds for this recipe.

    Place milk, cream half the amount of sugar, pudding, cinnamon, vanilla and nutmeg into a medium-sized saucepan over medium-high heat. Whisk to combine.

    Allow milk mixture to heat to just below simmering point, whisk well, then turn off heat and allow milk mixture to infuse with pudding and spices for 30 minutes.

    Strain milk mixture, reserving fruit and crumbs from the pudding for later use. Place milk mixture back in saucepan over medium heat.

    Place egg yolks and remaining sugar into a large mixing bowl. Whisk well until pale and thickened. Whisk about 1/2 cup of hot milk mixture into the egg yolks. Whisk in remaining milk mixture.

    Add milk mixture back into saucepan over a low heat. Stir mixture with a rubber spatula for about 3-5 minutes until mixture thickens slightly. Do not place on high heat or boil, as mixture will curdle and split. Once thickened remove from heat. Cool mixture in fridge or freezer or whisk over a bowl of ice until cool.

    Add reserved fruit mixture into the custard mixture.

    Churn mixture in an ice cream machine until thickened. Alternatively place mixture into a lined baking tray and whisk every 20 minutes until thickened. Place ice cream into ice cream moulds to set. Serve once frozen.
